Edamame, Avacado and Wasabi Guacamole with Sweet Simmered Tofu


This is sure to get the WOW factor going amongst your guests. Edamame are soy beans which can be found in the freezer section of your Asian Grocer.



1 Ripe Avocado

1 Cup Edamame Blanched or steamed for 2 minutes

1 tsp Wasabi (or to taste)

1 tbsp Soy sauce

1 Large chopped tomato

2 spring onions chopped

Pickled ginger, chopped

Season with Japanese Green tea salt (I cup Green tea ground with ½ cup Rock Salt and process), or Thermo  Sp 10, 20 seconds)

Lemon juice or water to thin if required (depends on size of avocado used)



Place Avocado, Edamame, soy sauce and wasabi in  food processor and process until smooth , or TM bowl and mix 30 seconds on speed 4-5 or until desired consistency.

Thin out with lemon juice or water if required

Stir through chopped tomato, ginger and spring onions or TM  reverse sp 2, 5 seconds

Season with green tea salt to taste and extra wasabi if desired.

Serve with raw vegetables, tofu, biscuits or fresh bread.



This is a fantastic way to incorporate tofu into your diet. It is delicious and will keep in your fridge for a week. Use it in stir fries, as an accompaniment to dips and crudités or as a snack on its own.



1 Block firm tofu, rinsed and cut into thick match sticks

2 tbsp tamari

1 tbsp kecap manis

1 tsp sesame oil

Water, as needed



1. Place tofu, Tamari, kecap manis  and oil in a wok or non-stick based pan.

2. Add enough water to just cover the tofu.

3. Bring to the boil then lower the heat to a simmer

4. Continue to simmer until the liquid has absorbed , turning once.

5. The tofu will turn dark brown.
